Does anybody out there have any fabulous recipes that use lots of carrots? My mom's garden apparently produced a bumper crop, and she's coming to visit next weekend to dress shop. She's planning to bring the carrots with her, apparently.
If you have crockpot recipes that use carrots, too, all the better!
Thanks, peeps!
Posted by LoWriter at November 15, 2008 02:00 PMmmm... carrots! yes, my fave recipe is to simmer a bunch of cut up carrots in butter and brown sugar in a pot til they are just cooked through.
on the more nutritious side, i've been keeping a whole bag of cut carrots in my work fridge and eating them as snacks instead of chips or pretzels. if you want a good, healthy dip: one packet of ranch salad dressing mix (powdered, and you can do the light or low sodium versions, they all work well) and add it to a medium sized tub of low fat or fat free sour cream. stir and voila!
or, you could simply give them to me - i am a carrot monster!! mmm!!! ;o)
Excellent! Thank you! You are more than welcome to come get some, depending on how many she brings (if she even ends up coming--my grandma just went into the nursing home).
