The Joy that Is Chicken Tostadas

Sunday's meal was chicken tostadas, featured in Diabetic Cooking. We doubled it (this is the doubled recipe).

We used:
Half a bag of boneless, skinless chicken breasts
4 teaspoons of cumin
1 and 3/4 cups of salsa
Half a bag of mixed peppers and onion stir fry mix (which you can get at Rainbow and apparently NOWHERE else).
1 15 oz. can of refried beans

First, you fry up the chicken until it is almost done. Then, throw in 1 and 1/2 cups salsa, the peppers/onions, and the cumin. Cook for six to ten minutes or until the chicken is completely done.

Meanwhile, mix the refried beans and the remaining quarter cup of salsa together and microwave. It said to do it for 3 minutes, but I did it for 2.

Spread the beans onto the tostadas and put the chicken mixture on top. Enjoy!

It was yummy and sweet. I highly recommend.

It was very good and easy to make. A half bag of chicken breasts is about 1.75 lb.

What's the second bit of cumin for in the recipe?

Thanks for catching that, Jeff. I made a mistake and entered one ingredient twice. Sorry! Only four teaspoons of cumin should be used. And P.S., you can buy cumin at a cheaper per ounce price at Target. There may be other great deals out there, but we burned through our last little container, so we bought a giant Archer Farms brand one.
